Paprika prawns, spinach and melon salad
Lots of lovely rainbow foods and nourishing ingredients in this one to help you feel bright and full of energy... plenty of antioxidants and phytonutrients to help banish those winter bugs etc. And a great big plus is it only takes ten minutes to make. Have it for lunch or add some sautéed potatoes with parsley and mint for dinner...
Ingredients: Serves 2
24 raw king prawns
Two slices of water melon
Salad leaves
1 carrot
1 beetroot
4 spring onions
2 large handfuls of spinach
A quarter of cucumber
Half a cup of cherry tomatoes
Handful of fresh coriander
Handful of fresh parsley and basil for salad
4 garlic cloves or teaspoon of garlic granules
Half a teaspoon of paprika
Few teaspoons of hemp oil
Olive oil and apple cider vinegar dressing
Two pinches of Himalayan salt and pepper
Method:
Dust the prawns in paprika and garlic, salt and pepper and cook in frying pan for required time... usually 4-6 minute until pink, add the spinach and coriander in the last minute. In the meantime spiralize the carrot and beetroot, cut up spring onion, tomatoes and cucumber, cube the water melon and add to salad leaves with your parsley and basil, then dress it with olive oil and cider vinegar. Add a couple of teaspoons of your homemade sauerkraut to give it that extra wee immune boosting quality! Enjoy!!!
