Cray fish with avocado and oven roasted vegetables.
Ingredients:

Takes 10 mins to prep and 25 mins to cook...
200g Cray fish
Mandarin orange
Lime
Two tablespoons of fresh mint
Two tablespoons of fresh basil
Two spring onions
Half a large avocado
Large sweet potato
Corgette
Red onion
Red pepper
Cup of broccoli florets
Couple of tbsp of Hemp oil to drizzle
Teaspoon of onion granules
Teaspoon of smoked paprika
Table spoon of fresh thyme
Fresh parsley to serve
HImalayan salt and black pepper to taste
Cube sweet potato and put into oven tray, drizzle with hemp oil and some onion granules and paprika, cook for ten mins at 200. Cube the rest of the veg and again drizzle with oil and seasoning and cook for a further 15 mins. In the meantime squeeze the lime juice and rind and add mandarin juice into the cray fish then add the finely chopped spring onion, cubed avocado, mint and basil. Sprinkle fresh parsley on the veg just before serving! Bellissimo!
